Terroir & Vinification
The boldest of our late-harvest wines. From a single-hectare parcel of old Gros Manseng and Petit Manseng vines, facing due south and rooted in a highly draining, stony soil.
The grapes are delicately picked, berry by berry, just before winter sets in, then vinified in the traditional way in two wooden barrels.
An intimate production of around 1,000 half-liter bottles for this truly unique wine!
Each wine has its own story...
L’Étoile des Neiges — known as l’Immortéla in the Pyrenees — is a rare and protected mountain flower.
A symbol of love, it mirrors the care and devotion shown to the Gros Manseng and Petit Manseng grapes used to craft this exceptional wine.
